Step into Style at the Madison Chamber’s Fashion Affair! The Madison Chamber of Commerce is teaming up with its fashion members to present the second annual Madison Fashion Affair on Thursday, March 29 from 4:30-7pm at the Madison Art Cinemas. Last year’s event was a resounding, sold-out success, raising $5,000 for the Chamber’s scholarship fund.

Emceed by WTNH-8′s Sonia Baghdady, this high style event will benefit the Chamber’s Scholarship program. We’ll kick off the evening at 4:30pm with a wine and hors d’oeuvres as guests peruse the silent auction. Attendees will then be guided into the theater to catch a glimpse of Spring fashions as models display clothes and accessories available at local Madison retailers and Chamber members. After mingling with models and friends, guests will then leave with a goodie bag containing a spring-colored pashmina wrap as well as exclusive coupons and and certificates for use at select merchants around town.

It all makes sense today….

Three years into this journey and I continue to find happiness in this life that has chosen me  and it came together again today.   The inn is filled with long time friends from home, repeat cusomters back for their 6 month anniversary, and new faces that are certain to become friends.    And let’s not forget the cute black poodle named Ebbe from New York enjoying his stay in the Madison Getaway.     There’s good energy at the inn tonight.     It’s great to be in good company.

Saint Patrick’s Day Special

Saint Patrick’s Day is a cultural and religious holiday meant to commemorate and celebrate the patron saint of Ireland and the arrival of Christianity in Ireland.   On a day that seems like everyone is Irish we celebrate St. Patrick’s by church services, wearing green, or sharing a beer (or two!) with good friends.

Here at the Scranton Seahorse Inn we’ll celebrate with food and drink.    Stay with us St. Patrick’s Day weekend (Friday or Saturday)and enjoy some homemade traditional irish fare.  Special room rates will include a full dinner with your choices of corned beef and cabbage,  beef and Guinness stew, Irish soda bread, and of course a helping Guinness and Irish Whiskey.  For dessert we’ll have our house made Guinness Ice Cream.    A traditional Irish breakfast will be served in the morning.

Presidents Day is an official holiday commemorating the birthdays of George Washington and Abraham Lincoln. What that translates into is a three day weekend which for many is the real celebration. We salute our 1st and 16th presidents by offering a last minute special.   All available rooms on Friday 17th through Tuesday 21st are just $100.

Scranton Seahorse Inn & The Madison Food Pantry

So many families across our great country are finding themselves in need of the things many of us take for granted on a daily basis.  Food, electricity, heat, medical care… 

We are blessed to be in the good company of the all volunteer organization Madison Community Services whose motto is “Neighbors Helping Neighbors”.    Their mission is dedicated to helping citizens of Madison through the availability of free programs in response to the needs of the local citizens. The services include transportation to medical appointments, financial crisis assistance, holiday food baskets, a supplemental food pantry, children’s summer camp scholarships, and school supply assistance.

We want to do our part.  Throughout November and December we will have a bin at the inn collecting non perishable food items from our guests.   If you can’t bring them with you, we are steps away from a supermarket!  In return for our guests generosity we will deduct $10 from their room charge and donate that directly to the Madison Food Pantry.

Apple Sour Cream Coffee Cake Recipe

When I was in pastry school one of the chef instuctors shared this recipe with our class.  I’ve carried this fairly simple recipe with me for many years and it’s always a hit.  When  I make it  at the inn I always get asked for the recipe.    Use your favorite tart, fresh and locally grown apples for the best results. 

  • 2 sticks of butter at room temperature
  • 2 cups sugar
  • 4 eggs
  • 1 T Vanilla Extract
  • 4 1/2 cups all purpose flour
  • 2 t baking powder
  • 1 t baking soda
  • 2 cups sour cream
  • 5 peeled and diced apples

In a stand mixer with the paddle attachment cream butter and sugar on medium – high speed until light and fluffy.   Add eggs one at a time  – completely incorporating and scraping down the bowl and paddle with a rubber spatula after each addition.  Don’t skip this step!    Add vanilla.

Combine all dry ingredients and whisk to incorporate.    Set the mixer to low and slowly add to butter and egg mixture until just combined. 

Add sour cream and mix until smooth.    Add apples until thoroughly mixed.  Pour mixture in even amounts into three 8″ spring form pans that have been sprayed and lined with parchment paper.   I suggest a struesal topping and you can use your own favorite recipe or here’s my easy nut free topping:

  • 1 cup unbleached all-purpose flour
  • 1 cup packed light brown sugar
  • 4 tablespoons granulated sugar
  • 1/2 teaspoon ground cinnamon
  • pinch table salt
  • 1 stick unsalted butter  cut into pieces, softened but still cool

In standing mixer fitted with flat beater, combine flour, sugars, cinnamon, and salt on low speed until well combined and no large brown sugar lumps remain, about 45 seconds. Add butter and mix on low until mixture resembles wet sand and no large butter pieces remain, about 2 1/2 minutes.    Spread evenly over each pan of batter. 

Bake at 350F until golden brown and a test inserted into each pan comes out cleanly.    About 1hr 10 minutes.
