End of Summer Special – Tuesdays Are Free

Am I really already posting an end of summer special?   It seems like the warm summer sunshine  just arrived and now in a few short weeks school will be starting all over and the wind down of Summer 2019 begins.

The good news is there is still plenty of time (and sunshine) left to plan a last minute getaway to the beach here  in Madison, Connecticut.   So if have haven’t taken the time or made the time to relax with your butt in the sand, the Scranton Seahorse Inn End of Summer Special is too good to pass up.    We have the inside scoop and great tips on the best places to relax, kayak, hike, eat and drink.

 

Any Tuesday night stay is free when you book a Sunday and Monday night.   The beaches are quieter on these days, there’s plenty of seating at our great restaurants in Madison, there are sunrises and sunsets that shouldn’t be missed.   Please make the time to call us today to  book your mini end of summer vacation before I make a new post about a winter special!

We will be serving our over night guests a traditional St. Patrick’s Day dinner every night the week March 17th – March 21st.

Join us any night  as we feature choices of Shepard’s Pie, Grilled Salmon, or Irish Lamb Stew in our dining room from 5-7pm.   Irish dinners are included in your room rate.  BYOG (bring your own Guinness).

We will also be serving some delicious Irish breakfast each morning too!

Turn The Tide On Plastic

Eliminating single use plastic is a worldwide initiative that gets a tremendous amount of press.  Educating yourself and then taking small steps to improve your own footprint isn’t difficult to do.

To help educate and to encourage there has been an active town wide program here in Madison for a few months that has been adopted quickly and effectively.   Our “Turning The Tide on Plastic” is not mandated but has seen a lot of success.  Chamber of Commerce executive director Eileen Banisch stated “we want people to want to do this, not have to do this”.  Many of our local businesses have taken steps to immediately eliminate plastic products from their offering.   For example, don’t be surprised if the straw in your water is a paper straw and don’t be offended if you’re encouraged stop using single use bags from the grocery store.

Because of our proximity on Long Island Sound we have a very keen interest on the amount of pollution that we can easily eliminate.  I’m very lucky in life that I get to walk the beach every day all year round.   I long for the day that I don’t have to pick up garbage while I’m walking.

Here at the Scranton Seahorse Inn we are taking steps to help too.

  • We have a 5-gallon bottle of water dispenser that we encourage guests to use to refill their reusable water bottles
  • Our soap is hand made locally and wrapped in recycled paper
  • Beginning this summer our toiletries and amenities will be packaged in recycled and recyclable material.

Dried Cherry Scones

When you live in a part of the country that doesn’t harvest fresh fruits and berries you sometimes need to come up with recipes that don’t rely on those ingredients.   Of course you can walk into any supermarket any day and find blueberries and strawberries.  But honestly once you’ve spoiled yourself with locally grown and picked berries you’re bound to bedisappointed with the results.   So in places like coastal Connecticut where I’m from it’s good to have some recipes that use dried fruits or spices in your repitoire.

 

This dried cherry scone recipe is a hit at the Scranton Seahorse Inn.   The tart cherries coupled with the sweet and slightly spicy taste of the curry (yes, curry!) usually catches my guests by surprise, in a good way.   I hope you try this recipe.  If you do, let me know what you think and what your friends think when they try it.

Ingredients:

4 cups Cake Flour
1/3 cup

1 T

2 T

¾ cup

1 ½ cups

1 ½ sticks

Granulated Sugar

Baking power

Curry Power

Baking soda

Kosher Salt

Dried Cherries (dried cranberries can be used here too)

Eggs

Heavy Cream

Unsalted Butter cut into small cubes

Directions:

Preheat oven to 375

Cut butter into small cubes and place in freezer while preparing other ingredients

Sift all dry ingredients together into your food processor and pulse ½ times to combine.   Sprinkle chilled butter into food processor and pulse until the butter is the consistency of small peas or coarse sand. Take care to not over process.   Turn flour / butter mixture into a large bowl.   Add cherries and stir to mix.

In a small bowl whisk together 1 of the eggs and cream.

Add the wet mixture into the bowl with the dry ingredients and using a large rubber spatula gently fold until completely incorporated taking care to not over mix.   With floured hands give the mixture a few turns. The mixture will be dry but make sure all the flour is incorporated into the scone dough before turning out onto a light floured counter or large cutting board.

Divide the scone dough into two equal parts.   Shape both pieces into into 6”discs. They should be about ¾ – 1” high. Cut each disc into 6 wedges by first cutting in half then cutting each half into 3 equal wedges.

Place the wedges on a sheet pan lined with parchment or a silpat. Whisk and egg with a splash of water and brush the tops of each. If you like a little more sweetness and crunch sprinkle turbinado sugar onto the tops.

Bake on the center rack for about 20 minutes until gold brown and delicious.

Have You Discovered Chia?

 

Chia Breakfast Porridge

Recipe

Chia seeds have amazing nutritional value and are high in antioxidants, Omega-3 and calcium.   There are a variety of seeds on the store shelves and I tend to buy the black seeds vs the white seeds.  This base recipe that follows is gluten free and dairy free and very flexible as far as what you add to the base.   I use almond milk but you can use soy, coconut, or rice milk.  I’ll be honest the only milk I haven’t used it whole milk (the chia has a lot of calcium already!).  I always try to use what ever fruit is in season once we hit spring time in Connecticut but you of course should use what ever flavor combination you love.

 

 

 

For each serving:

  • 1/2 cup unsweetened vanilla almond milk
  • 3 Tablespoons chia seeds
  • pinch of your favorite spice – cinnamon, cardamom, ginger
  • 1 T honey or syrup (optional)

Combing all ingredients into a mason jar or other container that has a lid with a tight seal.     Shake it like mad for a few minutes.  Put in refrigerator over night.

In the morning give it a good stir and add your nuts, fruits, coconut, or what ever your imagination tells you.  Consider using maple syrup in place of honey or cardamon in place of cinnamon.   If you try this and create a combination that you love let me know and I’ll try it out here.

Some popular toppings here include:   blueberry and lemon zest, mango and coconut flakes, fresh cherry and almonds.

I make about 15 – 20 servings at a time and it stores well in the refrigerator for at least a week.  Just be sure to stir it each time as the honey or syrup will settle.
